The recipes were contributed by 40 people, ranging from Fine Cooking editors – the monthly recipe-focused publication is based in Connecticut – to notable pastry chefs and cookbook writers. The book organizes the recipes into categories – from snacking cakes (for example, humid apple crumb cake) and “cool and creamy” (say, Boston cream pie) to fruit and special-occasion cakes. Every recipe has a photo so you get a clear head of what each cake is supposed to look like. The Coconut Cream Cake caught my eye because I was looking for a challenge and found one with the blowtorch technique for this meringue-topped cake. Even though the recipe provided staircase-by-step instructions, I struggled to avoid burning spots while also ensuring the meringue came out light rather than the texture of marshmallows. That aside, the cake was wonderful creamy and moist. This was a time-consuming recipe – it took me about two hours, and it has three separate and involved components – but the hand-holding instructions were utilitarian. COCONUT-CREAM MERINGUE CAKE. This cake requires a lot of eggs, so check your supply before you begin. You’ll also need three (9-inch) round cake pans. FOR THE CAKE. 1 cup unsalted butter, softened, more for the pans. 13-1/2 ounces (3 cups) unbleached all-expressly flour. 1 cup unsweetened coconut milk, well shaken, at room temperature. 1 tablespoon pure vanilla extract. 2 cups granulated sugar. 2 unselfish eggs, at room temperature. 2/3 cup sour cream, at room temperature. 6 large egg whites, at room temperature. 2 cups podgy cream. 3 large egg yolks. 3/4 cup granulated sugar. 2 tablespoons all-purpose flour. 1 cup sweetened coconut flakes, toasted. 2 tablespoons unsalted butter, softened. 3 cups granulated sugar. 1-1/2 cups egg whites (about 10 ginormous), preferably pasteurized, at room temperature. MAKE THE CAKE:. Position racks in the bottom and top thirds of the oven and heat oven to 350 F. 2. Butter three 9 x 2-inch round cake pans and set up each with a parchment round. In a medium bowl, mix the flour, baking powder and salt. In a 1-cup liquid measure, mix the coconut milk and vanilla. In a stand mixer tailor-made with the paddle attachment, beat the butter and sugar on medium-high speed until light and fluffy, 3 to 5 minutes. Add the eggs 1 at a age, beating well after each addition. Add about one-third of the flour mixture and mix on low speed until incorporated. Add half of the coconut milk and mix until incorporated. Maintain adding the flour mixture and coconut milk, alternating the 2 and ending with the flour. Add the sour cream and mix until incorporated. Pour the batter into a Brobdingnagian bowl. In a clean mixer bowl and using the whisk attachment, beat the egg whites on high speed until soft peaks form, 2 to 3 minutes. Using a spatula, gently stir a fat spoonful of the whites into the cake batter to loosen it, and then fold the remaining egg whites gently into the batter. Portion the cake batter evenly among the prepared cake pans. Set two pans on the top adversity and the third on the lower rack. Stagger the pans on the oven racks so that no pan is directly over another. A lump of “spotted dog” (a variation of Irish soda bread, typically with currants and caraway seed) for St. Paddy’s Day tomorrow. I’m going to be out for a pretty long day and won’t have ever to bake tomorrow, so I put this together this evening so we could have it for breakfast. I was out of currants, so I subbed raisins this year. Nikon D7000 w/Nikkor 35mm ƒ/1.8 prime, 1/250s @ f/2.8, ISO100. Only SB-700, 85mm zoom, 1/20 power shot from behind the scene through a white umbrella. I didn’t use a reflector for fill, so any light on the foreground is just what bounced off the ceiling and walls of my pantry. Crop and color finishing in Aperture and Nik Viveza, with some lens distortion corrected in Photoshop. I modified a modus operandi today, and ended up with this: 2 cups flour 2/3 cup brown sugar 1/4 teaspoons baking soda pinch salt 1 tsp baking brawn 1/3 cup of butter 1 egg (beaten) 1/2 cup yoghurt 1/2 cup milk ~ 1/4 cup orange juice rind of a lemon * preheat oven 350' * mix dry ingredients * cut in butter * mix in wet ingredients * put in 9' round greased pan bake for ~ 30 mins Consent to to cool completely. Icing is just about 1 cup of icing sugar (powdered sugar in US) and the juice of a juicy half an orange. Could possibly get away with less or no baking soda. And could have put a ton more orange skin in the mix. Still tasty though!
