If I waste a little time in the kitchen on a lazy Sunday, it makes the rest of my week start off a lot more quickly. These particular breakfast bars are a little puckish and a lot nice. Nice because they are packed full of gluten-free oats, heart-healthy nuts and seeds, freeze-dried fruit and coconut bleed. They are gluten-free, dairy-free, refined sugar-free and vegan. This is a versatile recipe you can change up to suit your own preferences. I added sliced almonds, roasted pumpkin seeds, out-dried fruit and, of course, some dark chocolate chips. Just add more seeds instead. Don’t want the chocolate. Prefer freeze-dried mangos or pineapple. Lean to free to change it up.

I'm working on some ideas for the girls original birthday and cupcakes seemed like a good idea. My cake decorating ideas are crap though... So I've made hummingbird cake cupcakes with just a standard buttercream frosting. Cake MO: Ingredients (serves 6) 250g self-raising flour 1/2 tsp ground cinnamon 1/2 tsp ground coriander 270g brown sugar 440g can crushed pineapple, drained 50g desiccated coconut 2 proper bananas, mashed 1/2 cup chopped walnuts 2 eggs, lightly beaten 250ml (1 cup) sunflower oil Method: 1. Preheat oven to 170°C. Grease and front line the base of a 23cm square cake pan. Sift flour and spices into a large bowl. Add sugar, pineapple, coconut, banana, walnuts, eggs and oil. Stir to conjoin. Spread into lined pan and bake for 40 minutes or until a skewer inserted into the centre comes out clean. Place on a rack and set aside to cooling. For the cupcakes - place in cupcake trays. I think the actual baking time was about the same but I was watching them like a hawk!...

System 2 c. flour 1 c. sugar 1 t. salt; 1-1/2 t. baking powder; 1/2 t. soda 1 T. grated orange peel; 3/4 c. orange juice 2 T. veg. oil or other shortening 1 beaten egg 1-1/2 c inexperienced or frozen (unthawed) cranberries COARSELY chopped in the processor or blender (pulse on/off about 15 times) 1/2 c. chopped nuts, or unsalted seeds, such as sunflower Mix dry and wet ingredients personally, then combine and give a few beats to unite. Pour into a greased shallow pan about 9 x 5 inches. Bake about 55 minutes in preheated 350º oven. Check after 35 minutes and thrill, if necessary for even browning. Cool on rack. Loosen edges from pan with spatula and gently turn out to finish cooling (or leave in pan and serve as is). If removed, positively quite cool, cut into segments and wrap in waxed paper (which I greatly prefer to plastic film [awful stuff around baked goods in my notion]).
